Email: venezia@zgi.com Everybody brews a Cascade showcase and I wanted my own with moderate maltiness and Cascade hops EVERYWHERE! I had rarely used Wyeast 1056, but wanted a clean brew with little fruitiness, hence 1056 and the low fermentation temperatures. This effort surprised me by producing an outstanding simple pale golden beer with maltiness in the palate and nose and Cascade hops in the nose, mouth, throat, eyes, and ears - everywhere, with a beautiful thick, long-lasting head.
This beer improved after 2 weeks of cold-conditioning at about 36F.
