Great tasting beer that mellowed nicely at 4 weeks in the bottle. Nice bitter w/o being harsh

Batch Size: 5 gal
Starting Gravity: 1.055
Finishing Gravity: 1.012
Time in Boil: 60
Primary Fermentation: 7 days
Secondary Fermentation: 8 days
Ingredients:
- 6 lbs extra pale DME
- 1 lb crystal malt 60l
- 1 oz eroica hops
- 3/4 oz fuggles hops
- 3/4 oz kent golding hops
- 1/2 tsp Irish moss
- Liquid yeast -- 1028 London ale
Procedure:
2 gals water
Steep the grains until boiling
Add DME and eroica hops
At 45 minutes, add 1/4 oz fuggles and 1/4 oz kent goldings
At 45 minutes at 1/2 tsp Irish moss
At 60 at 1/2 oz fuggles and 1/2 oz kent goldings
Cool wort add to 3 gals water and pitch yeast
