This is a great summer ale to enjoy with friends and family.

Primary Fermentation: 1 week @70 degrees
Secondary Fermentation: 1 week
Ingredients:
- 4 oz. Biscut cracked
- 4 oz. 10L cracked
- 8 oz. malted wheat cracked
- 1 4# can Alexanders light malt extract unhopped
- 2# munton/fison x-lite malt powder
- 1 oz Tettnang hops 60 min boil
- 1/2 oz. cascade hops 15 min boil
- 1/2 oz. cascade hops 2-5 min boil
- 1 tsp gypsum (for water hardness)
- 1 tsp irish moss (clarifier)
- wyeast liquid yeast starter 1056
Procedure:
bring a couple of gallons dechlorinated spring water to 150-160 deg. steep speciality grains (biscut, 10L, and wheat) 20 min. strain out any husks or use grain bag to save time.
bring water to a boil and add extract,dry malt,1 oz. Tettnang hops, and gypsum.boil for 60 min.
15 min before end of boil add 1/2 oz. cascade hop, and irish moss.
2-5 min before end of boil add 1/2 oz. cascade hop.
at end of boil transfer wort to primary fermenter, add additional dechlorinated spring water to make 5 gallons and cool wort to yeast pitching temp, add yeast and areate to intoduce oxygen.
seal fermenter with airlock and ferment 1 week or until bubbles reduce to 1 per minute.
transfer to secondary fermenter for 1 week to clarify.
bottle and enjoy.
