This is my house standard. If you ask me for a beer, this is what you will get.

Time in Boil: 60 min.
Primary Fermentation: 65 F for one week
Secondary Fermentation: 55 F for 1 month +
Ingredients:
- 4lbs Beestons Golden Promise (2 Row Pale malt)
- 4lbs Beestons Maris Otter Floor Malt (2 Row Pale Malt)
- 1/2 Lb UK Medium Crystal (50 L or so)
- 1.5 oz East Kent Goldings Plugs for 60 Min.
- .5 oz E. Kent Goldings plugs for 25 min.
- .5 oz E. Kent Goldings plugs for 5 min.
Procedure:
Single step infustion mash for 1hr 30 min. at 153 F, 1.25 qts. per lb (a little more than 2 and a half gallons). Infuse boiling water to 165-170 F and put into your lauter tun. Stir and rest 20 min. Recirculate, using a heated grant if possible, untill clear. Sparge untill runnings are 1.008 SG. Boil at least 60 min, and untill volume is reduced to a little over five gallons. If volume is low add filtered water. Chill and ferment with Wyeast #1098 (British ale). Use at least a 1 pint starter.
