Last Minute Pale Ale

This was a recipe that was put together at the last minute to serve as a yeast starter for a brown ale.It kinda walks the line between an english pae ale and an I.P.A. It is very hoppy with a fruity slightly sweet finish. Not too bad!

Recipe type: Extract
Batch Size: 5 gallons
Starting Gravity: 1050
Finishing Gravity: 1012
Time in Boil: 60 minutes
Primary Fermentation: 7 days
Secondary Fermentation: 7 days
Ingredients:
- 1 # 40 degree crystal malt
- 6 # light dme
- 1 # dark brown sugar
- 1 oz. northern brewer hops
- 2 oz. challenger hops
- 2 oz. target hops
- wyeast # 1318
- 1/2 cup honey ( to prime )
Procedure:
steep grains in 1 gallon 150 - 160 degree water for 30 minutes.Rinse with 1 gallon 159 degree water. Treat water with 1/4 oz water salts and 1 tsp gypsum.Boil for 1 hour adding hops according to schedual:
60 minutes: 1/2 oz n.brewer
1/2 oz challenger
1/2 oz target
15 minutes: 1/2 oz n. brewer
1/2 oz challenger
2 minutes: 1 oz target
1/2 oz challenger
dry hop: 1/2 oz target
1/2 oz challenger
