This is a very light ale that retains a high alcohol
content. It is very pleasant with a slight citrus tang
and aroma. Enjoy!

Primary Fermentation: Glass carboy - 3 days
Secondary Fermentation: Glass carboy - 8 days

Ingredients:
- 3# Muntons 55%/45% plain dry
- 2# fresh light clover honey
- 1 oz. 3.5% tettnang pellets
- 1/2 oz. 5% cascade pellets
- 1 tsp. irish moss
- juice of one large lemon
- 11g. Edme ale yeast
- 3/4c.corn sugar for priming
Procedure:
Dissolve extracts and honey in 2 gal. of water as you
bring it to a boil.
Add 1/2 oz. tettnang as boil starts.
Add 1/2 oz. tettnang @ 30 min.
Add 1 tsp. irish moss @ 45 min.
Add 1/2 oz. cascade @ 57 min.
Remove from heat and add lemon juice @ 60 min.
Allow to steep for 5 min.
Strain into 2 1/2 gal. precooled water in primary.
Rehydrate and pitch yeast when cool.
