This beer is smooth and creamy, with a strong malt taste and full body. A very good beer.

Finishing Gravity: 1.024
Time in Boil: 1 Hr.
Primary Fermentation: 12 days @ 50F
Secondary Fermentation: 8 days @ 50F
Additional Fermentation: 10 days @ 50F
Ingredients:
- 8 1/3 lbs Klages
- 1 1/4 lbs Crystal 120
- 1 lb Munich
- 1 lb Cara-pils
- 5/8 oz Eroica (homegrown)
- 1 1/8 oz Tettnanger pellets
- 1 tsp Irish moss
- 1 tsp Gypsum
- Wyeast Bavarian Lager
Procedure:
Mash all grains in 12 quarts of 140F strike water. Mash at 130F for 40 minutes. Raise to 150F for another 40 minutes, then raise to 165F for 5 minutes and sparge wth 6 1/2 gallons of water. Bring to boil and add Eroica hops. At 30 minutes into the boil add 5/8 oz of the Tettnanger hops. At 50 minutes add the rest of the Tettnanger and the Irish moss. Chill and sparge to fermenter. Pitch yeast.
