My thermometer broke during the acidification rest so I had to brew as they did in the old days. And of course it's one of the best beers I've ever brewed.
Specifics
Recipe type: All Grain
Batch Size: 5 gallons
Starting Gravity: 1.070
Finishing Gravity: 1.014
Time in Boil: 100 minutes
Primary Fermentation: 10 days
Secondary Fermentation: 1 week
Additional Fermentation: bottle conditioned
Ingredients:
- 12 lbs. Pale 2-Row malt
- 1 lb. Victory 25L
- 1/4 lb. Crystal 60L
- 1/2 lb. Dark Belgian Candy Sugar
- 1 1/2 oz. Northern Brewer 100 min
- 1/2 oz. Hallertau 40 min
- 1/4 oz Willameete at strike
- 3/4 cup Dextrin for priming
Procedure:
Traditional three decoction mash. Sparge with 8 gals for 3 hours. Add sugar to boil 1/2 hour before end.
