Magnums are a fairly new kind of hops with low co-humulones which lend to a mellow bitterness. I also add cascades (I live in California - what can I say?) for a nice aroma/flavor. I might try Ultras - which are also a new hop with very nice aroma.
You may want to try to lower the gravity, as this turns out to be a pretty high alcohol "session beer".
Specifics
Recipe type: All Grain
Batch Size: 5 gal
Starting Gravity: 14
Finishing Gravity: 3.5
Time in Boil: 60 min
Primary Fermentation: 5 days
Additional Fermentation: 5 days in keg
Ingredients:
- 8 lbs Hugh Baird 2row
- .5 lb 20L Crystal
- 1lb Carapils
-
- .5 Oz. 15% Magnum hops boil
- 1oz 5.6% Cascade hops 10 min LOB
- 2Oz 5.6% dryhop Cascade (1 week)
-
- WLP002 (1968) Yeast
-
Procedure:
Mash for 45 min at 150 degrees. Dryhop after primary fermentation.
Let the beer condition for at least a week to settle the yeast and for a diacetyl rest (WLP002 usually doesn't have these problems, but yeast/off flavors greatly affect the flavor of the beer because of this yeast(in my experience)).
