This beer was a little hoppy for my taste but was extremly high in alcohol. This could be a beer for friends who drink commercial beers. Enjoy.

Batch Size: 5 gallons
Starting Gravity: 1.065
Finishing Gravity: 1.010
Time in Boil: 60 minutes
Primary Fermentation: 5 days @ 64 degrees
Secondary Fermentation: 4 days @ 64 degrees
Additional Fermentation: none
Ingredients:
- 7 lbs. Extra Light Malt Extract
- 1 lbs. Rice Syrup Solids
- 2 oz. Willamette's(pellets 5.6% aa)
- 2 oz. Cascade's(pellets 5.6% aa)
- 2 packs Danstar Nottingham Yeast
- 3\4 cup priming sugar
Procedure:
Add extract, rice solids and 2 oz. Willamette's to 2.5 gallons boiling water. Add 1 oz. Cascade's to last 15 minutes of boil. Chill wort to 80 degrees and add to additional 2.5 gallons of room temp. water. Pitch yeast and let ferment till bubbling has decreased. Rack to secondary and add 1 oz. Cascade's for aroma and set for 4 days. Prime and bottle condition for 2 weeks.
