A Big and Green Hoppy Brew - A definite northwest hophead style pale ale - a cross between Diamond Knot IPA (WA) and Duck Dive Pale Ale (Cannon Beach)- (for locals to PNW). This recipe took third at the Oregon Homebrew Festival in Corvallis May 2000. (This recipe is interchangeable with the 3-C's - Cascade, Centennial, and Columbus Hops - each adding their own unique taste)

Ingredients:
- 7.5 lbs. English Pale Malt (3.0)
- 1.0 lbs. Victory (toasted) Malt (25)
- 1/2 lbs. English Crystal (50-60)

- Hops: Centennial and Columbus

- Yeast: British Ale (Wyeast 1098)

- irish moss
Procedure:
Single infusion mash @152 degrees for 80 minutes
Boil time - 90 minutes
3/8 ozs. Columbus @ 90
5/8 ozs. Centennial @ 45
irish moss @ 20
5/8 ozs. Columbus @ 15
1.0 ozs. Columbus @ 2
3/4 ozs. Columbus (dry hop) -7 to 10 days
bottle using prefered method (this recipe used 21 ozs. gyle - unfermented wort pulled before yeast)
