This recipe went over like gangbusters at my last homebrew club meeting. No one believed it was only in the bottle two months. It is semi-dry, without a hint of any off
tastes.

Primary Fermentation: 7 days at 70' F
Secondary Fermentation: 21 days at 70' F
Additional Fermentation: until clear
Ingredients:
- 7 lbs clover honey
- 1 can Welch's 100% juice White Grape juice
- 1 tbsp acid blend
- 5 tsp yeast nutrient
- 2 tsp crushed coriander
- 1/2 oz. sweet orange peel,dried
- yeast cultured from Westmalle Trappist Tripel
Procedure:
Dissolve honey into 1&1/2 gal water. Add remaining
ingredients except for yeast. Heat just to the point of
boiling, skimming foam as it rises. Add hot must to 3 gal
cold water in primary fermenter. Top off to 5 gal. Pitch
yeast at about 70' F. Rack into secondary after 7 days.Rack
once more after 2 weeks. After 1 week bottle with 3/4 c.
corn sugar.
