this was my first pale ale and it is unbelievably good. nice citrusy flavor with dry finish from the honey. i think next time i will add 1/8 lbs chocolate malt and shoot for something closer to rouges dead guy ale but in the mean time this beer tastes great and is potently alcoholic

Primary Fermentation: 1 week
Secondary Fermentation: 1 week
Ingredients:
- 6.6 lbs muntons light malt extract
- 1/2 lbs crystal malt 30 loveibond
- 2 1/2 lbs light honey
- 1 1/2 tsp gypsum
- 1 oz cenntenial hops AA 9.4%
- 3/4 oz kent golding hops AA 5.0%
- 1/2 oz willamette hops AA 4.8%
- white labs english ale yeast
Procedure:
steep crystal malt in 1 1/2 gal water and bring to a boil. then remove grains and add extacts and half the cenntenial hops.after 30 min add honey and the other half of the boil hops.add kent goldings 3 min before end of boil pitch yeast when cool. dry hop with willamette during secondary fermentation.
