This is a nicely balanced beer that drinks well during a hot
Texas summer.

Starting Gravity: 1.05
Finishing Gravity: 1.015
Time in Boil: 45 min
Primary Fermentation: 7 days
Secondary Fermentation: 7 days
Ingredients:
- 1 1/4 lb. crystal malt
- 1/4 lb. torrified wheat
- 6.3 lbs. plain light malt extract syrup
- 1/2 lb. corn sugar
- 1 1/2 oz. Styrian Goldings hops @ 4% AA (boiling)
- 1/2 oz. Styrian Goldings hops @ 4% AA (finishing)
- 1 tsp. Irish moss
- 3/4 cup corn sugar (bottling)
Procedure:
Steep grains at 160 degrees for 30 min.
Add malt, sugar and hops & boil for 35 min.
Add finishing hops and Irish moss, boil 10 more mins.
Ferment @ 75 degrees
