Roadkill Ale - Mk I

This is based very loosely on Racoon Lager. It's one of my (and my friends') favorite recipes, although I don't always stick with it "as is". This version is a bit lighter hopped than other versions, but still quite good.
The SG readings may be a bit off - my old hydrometer was an inaccurate POS which has since been replaced.

Finishing Gravity: 1.004
Time in Boil: 60 minutes
Primary Fermentation: 3 weeks
Secondary Fermentation: none
Ingredients:
- 0.5 lb Crystal 40
- 3.3 lb Nortwestern Gold Malt Extract
- 3.0 lb honey (grocery store variety)

- 2.0 oz Cascade Hop Pellets (5.8%AA) for 60 minutes
- 1.0 oz Cascade Hop Pellets (5.8%AA) for 15 minutes

- 1 Whirlfloc tablet

- White Labs Dry English Ale Yeast (WLP007)
Procedure:
Start with 2 gal cold water and steep crystal 40 to near boil. Remove the grain and crank up the heat a bit.
Add in the Gold Extract and Honey, bring to a low boil. When boil begins, add 2 oz of Cascade hops. 45 minutes later add in the other 1 oz of Cascades and a Whirlfloc tablet.
Pour the hot wort into a carboy of cold water, and top it off to about 5 gallons with more cold water.
Pitch the yeast when it cools down to the appropriate temp.
Bottle using 1.5 cups of light DME.
