I have quite a clan of regulars who visit my home brewery
(doesn't every home brewer?) and this is consistantly the
favorite brew!!
Specifics
Recipe type: All Grain
Batch Size: Ten Gallons
Starting Gravity:
Finishing Gravity:
Time in Boil: 75 minutes
Primary Fermentation: 3 weeks-15 gallon stainless keg
Secondary Fermentation: 2 weeks stnls keg @ 45 degrees f
Ingredients:
- 20 lbs Gambrinus Pale
- 2 lbs Crystal 40
- 3 lbs Briess Honey Malt

- 2 Colombus, 1 Hood 60 minutes
- 2 Colombus, 2 Hood 30 minutes
- 1 Colombus, 1 Hood 5 minutes
Procedure:
Mash grains with enough 178 degree water to achieve 155
degrees for 90 minutes
At the end of the mash, I recirculate using a small pump in
order to help settle the grain bed and clarify
Sparge 60 minutes with 178 degree water
Boil 15 minutes before adding hops, then continue with hop
additions at 30 and 5 minutes
Chill to below 80 degrees and pitch Wyeast 1056 (cultured
2 days with 1 pint of wort)
