This was my first attempt at such a beer. After 1 month of bottle conditioning I tried one. It was pretty good. Very high alcohol content with a thick malty taste. I suspect it will get better with age.

Recipe type: All Grain
Batch Size: 6 Gallons
Starting Gravity: 1.086
Finishing Gravity: 1.008
Time in Boil: 1.5 Hours
Primary Fermentation: 1 week
Secondary Fermentation: 2 weeks

Procedure:

Used single step infusion mash. Added 170F stike water to grain to mash in at 150 F. Held for 1.5 hours. Sparged at 170F. Brought wort to boil, then added honey and molasses. Brought back to boil. Let boil for 30 min. then added 2 oz of fuggles. Boiled for additional 45 min. then added 1 oz fuggles, and Irish moss. Boiled for 15 more min. Chilled wort and pitched with 1 pint of starter.
