Great wheat beer tang / taste. Stayed cloudy, but excellent light, refreshing *beer* taste, with slight nose of apricot, and strong finish of woody, apricot flavor.

Batch Size: 10 Gallons
Starting Gravity: 1.061
Finishing Gravity: 1.012
Time in Boil: 60 mins
Primary Fermentation: glass - 65deg. 10 days
Secondary Fermentation: glass 65 deg. 2 weeks
Additional Fermentation: kegged and quaffed!
Ingredients:
- 12 lbs pale malt
- 8 lbs malted wheat
- 2 gallon ziplocks full of fresh frozen apricots steeped at end of boil
- 2.5 oz. Hall. hersb. hops
Procedure:
Mash-in at 151, rest w/ periodic RIMS for 1 hour,
sparge to 12 gallons, boil w/ 2.5 oz hops for 75 mins
Warmed frozen apricots to ~160, added to boiler at knock-out
Drained to c-flow chiller, stuck, switched to immersion chiller,
chilled, and racked to 2 carboys, pitched w/ 1056 culture
My five gallons: (other half split w/ brewing partner)
Racked to 2ndary after 10 days, chilled to 50 in fridge
still hazy, kegged after 2 more weeks w/ 1 oz Apricot essence
