Rasberry Chocolate bitter

This is a very pleasent beer with sour overtones. While this beer looks like a stout, it pierces taste buds instead of smothering them as the milk of Ireland typically does.

Time in Boil: 1 1/2 hours
Primary Fermentation: 3 days
Secondary Fermentation: 3 days
Ingredients:
- 3 pds chocolate malt
- 1 pd chrystal malt
- 3 pds light dried malt extract
- 6 pds clover honey
- 8 pds black rasberries
- 1/2 ounce sweet orange peels
- 3/4 ounce kent goldings (boil)
- 1/2 - 1 ounce fuggle (flavor)
Procedure:
bring 2 gallons to 130 F,
add chocolate and chrystal malt, stay at 122 f for 30 min,
bring to 150 for 15 min,
bring to 158 for 30 min,
rack off grains and sparge,
add 2 gallons water and bring to boil,
add honey and dried malt extract and kent goldings,
boil for 1 hour,
partialty smash rasberries,
add fuggle, rassberries, and orange peels.
Boil for 15 minutes,
strain off orange peels and rassberries,
rack to primery fermentor,
add 1-3 gallons of water,
bring temp to room and add yeast.
