"Burton Style" Pale Ale

This recipe makes and good English Pale Ale. It reminds me of Sammual Smiths Old Brewery Pale Ale. Give it a try you won't regret it.

Starting Gravity: 1.050
Finishing Gravity: 1.011
Time in Boil: 60 Minutes
Primary Fermentation: 7 days in glass @ 65° F.
Secondary Fermentation: 10 days in glass @ 65° F.
Ingredients:
- 7lbs. Telford's Ultra Light Malt Extract
- 1/2lb. British Carastan Malt (15L)
- 1/4lb. British Crystal Malt (75L)
- 1/4lb. Victory Malt
- 2oz. Fuggle Pellets(4.5%AA)
- 2oz. Kent Golding Pellets(5.6%AA)
- 1/4tsp. Irish Moss
- 1oz. Burton Water Salts
- 1 White Labs #WLP023 (Burton Ale) Liquid Yeast
Procedure:
Steep grains in 3 gallons of 160° water for 30 minutes.Add malt extract, Fuggle hops, and Burton Salts and boil for 40 minutes. Add Irish Moss and 1oz. of Goldings and boil for 20 more minutes. Turn of heat and add last oz. of Goldings and steep for 5 to 10 mintues. Cool wort and pitch yeast.
